Triple Espresso Brownies

Ingredients for brownies:

1 (18.4-oz) pkg chocolate fudge brownie mix
2/3 cup oil
1/4 cup water
2 eggs
2 teaspoons instant espresso coffee granules
1 teaspoon vanilla

Ingredients for filling:

1/4 cup butter, softened
1/2 cup firmly packed brown sugar
1 egg
2 teaspoons instant espresso coffee granules
1 teaspoon vanilla
1 cup coarsely chopped walnuts
12 oz bittersweet chocolate, coarsely chopped

Ingredients for glaze:

1/2 cup semisweet chocolate chips
1 tablespoon butter
1/8 teaspoon instant espresso coffee granules
1 to 2 teaspoons milk or whipping cream

Directions:

1. Heat oven to 350°F. Grease bottom only of 13 x 9-inch baking pan.

2. In large bowl, combine all brownie ingredients. Beat 50 strokes with spoon then spread batter into prepared pan. Bake for 28 minutes. Remove from oven.

3. Meanwhile, in small bowl, beat 1/4 cup butter and brown sugar until light and fluffy. Add 1 egg, 2 teaspoons coffee granules and 1 teaspoon vanilla. Blend well. In medium bowl, combine walnuts and chopped chocolate. Add brown sugar mixture and blend well.

4. Carefully spoon the filling over baked brownies. Return to oven and continue to bake an additional 17 to 20 minutes or until light brown.

5. In small saucepan, melt chocolate chips and 1 tablespoon butter over low heat, stirring constantly until smooth. Remove from heat. With wire whisk, stir in 1/8 teaspoon coffee granules and enough milk for desired pouring consistency. Drizzle over warm brownies.

6. Cool brownies for 45 minutes then cut into small bars.

How about a little bass action to go with your buzz?

‘Weightless’ is new from London-based singer Anna Tosh. After playing in various bands, this is her first at going solo. The song, described by its promo “as cool as midnight in Reykjavik”, weaves soul into indie rock. And there is a spoken word interlude…always a favorite of mine.

Check out Anna Tosh on Facebook. Her EP, ‘One Big Fire’, is set to be released this September.

Cheers!
