We are a very happy household here. What a game!

After lots of chips, dips, pizzas and tacos, we had this Frozen Mint, Chocolate And Pecan Cream Terrine.

This cool dessert couldn’t be simpler. Whipped cream combined with custard, chocolate and pecans is layered between thin, crisp After Eight Mints. Assemble in 15 minutes and this easy frosty treat hangs out in the freezer until you’re ready for it.

Frozen Mint, Chocolate And Pecan Cream Terrine

Ingredients:

300g/10 oz whipping cream
2 Tbs confectioners’ sugar
500g ready-made vanilla custard (I used pudding)
150g dark or bittersweet chocolate, coarsely chopped
75g/3/4 cup toasted pecans, coarsely chopped
24 After Eight Mints

Directions:

1. Whisk whipping cream with sugar in a large bowl until soft peaks form. Fold in vanilla custard then the chocolate and nuts.

2. Line a 1.5 liter loaf tin (approximately 9 x 5 inch) with cling film, letting some of the plastic wrap hang over the sides.

3. Line the base of the tin with a third of the mints, then spoon a third of the cream mixture on top. Repeat two more times, finishing with a layer of the cream.

4. Wrap well then freeze for 5 hours until set. Remove from freezer 10 minutes before serving. (Use a sharp knife run under hot water to make it easier to slice.)
