Have you seen this ad? There is something so disturbing about it….the Miley tongue and then the guy who starts eating his fellow cereal. WTF???

Much less disturbing is this yummy Tortellini Bacon Salad. Light, with just a hint of lemon and oregano and served over mixed greens, it is the perfect summer dish.

Lemony Tortellini Bacon Salad

Ingredients:

2 cups frozen cheese tortellini (about 8 ounces)
4 cups fresh broccoli florets
3/4 cup mayonnaise
1 tablespoon balsamic vinegar
2 teaspoons lemon juice
3/4 teaspoon dried oregano
1/4 teaspoon salt
5 ounces spring mix salad greens
4 bacon strips, cooked and crumbled

Directions:

1. In a large pot, cook tortellini according to package directions, adding broccoli during the last 5 minutes of cooking.

2. Meanwhile, in a small bowl, mix mayonnaise, vinegar, lemon juice, oregano and salt.

3. Drain tortellini and broccoli. Transfer to a large bowl. Add dressing; toss to coat.

4. Serve tortellini over salad greens; sprinkle with bacon.

Serves 4
