The last day of school.

You know what that means?

Cocktail time is more welcome than ever! While it is summer and the “living is easy”, it also means 4 kids to keep occupied all day. Therefore, a fun drink at the end of the day is almost mandatory. :)

These Napoleon Champagne Cocktails are elegant and easy. A more potent version of the Mimosa, they’re perfect for either Happy Hour or brunch.

Napoleon Champagne Cocktail

Ingredients:

6 sugar cubes
Bitters
6 teaspoons Cognac
6 tablespoons Grand Marnier or other orange liqueur
1 750-ml bottle chilled extra dry champagne
Orange peel strips

Directions:

1. Place 1 sugar cube in each of 6 champagne flutes. Sprinkle each sugar cube with 2 dashes of bitters.

2. Pour 1 teaspoon Cognac over each sugar cube. Add 1 tablespoon Grand Marnier to each glass. Fill glasses with champagne.

3. Garnish glasses with orange peel strips and serve.

One thing I know for sure, for the next 2 months I will never be lonely.

Ghost Twins’ ‘Never Fear Total Failure’ was released this past March. It’s one of my favorite records of 2014.
