Oh eggs! Sorry you so sad when you make me so happy.
Okay, who loves Grilled Cheese?
How about Egg In The Hole?
Put them together and you have one heck of an awesome sandwich that is perfect for breakfast, lunch or dinner.
Egg-in-the-Hole Grilled Cheese
Ingredients:
2 slices bread
2 slices cheddar cheese
1 egg
Butter
Salt & Pepper
Directions:
1. Melt a pat of butter in a skillet. Place the cheese between the two slices of bread and cook the sandwich over medium-low heat. While cooking place some butter on the top of bread.
2.When bottom of sandwich is lightly browned and crispy, flip over. Cut a circle out of the top of the grilled cheese with a sharp knife or round cookie cutter.
3. Crack the egg into the hole. It will spill over the sides. Season with salt and pepper. Cover the skillet with a lid and continue to cook for two or three minutes longer, or until egg is desired consistency. (I flipped the sandwich back over to further cook the yolk…not as pretty, but that is my desired consistency. The yolk was still plenty runny.)

Be Careful.
You just might fall in love with this new song from Lyon Apprentice.
Only 4 hours on Soundcloud, the song is truly brand spanking new. ‘Be Careful’ is the first release from the Australian brother duo’s debut EP, “Be Honest, Be Wild, Be Free” due out on Friday April 4th.
I love the slow, quiet, piano driven start that builds up to the catchy, cautionary chorus. The brother’s harmonies are solid over the layered instruments and insistent rhythm.
Check out Lyon Apprentice on the band’s Website, Facebook and Canvas Sounds, where you will be able to buy their music.
