2 Ingredient Pumpkin Muffins. Really?
2 words:
So easy.
Really yummy.
Just 2 ingredients and you have a big batch of Pumpkin Muffins. Literally ready in 30 minutes.
These muffins are dense and full of pumpkin spice flavor, as you would expect, of course! I couldn’t resist adding chocolate chips to half of the batter, because I love the chocolate-pumpkin combo.
I used a gluten free cake mix, because that was the only spice cake mix available at my grocery store. It was very good.
2 Ingredient Pumpkin Muffins
Ingredients:
18 ounces spice cake mix
1 (15 ounce can) pumpkin purée
Directions:
1. Preheat oven to 350℉. Place 24 cupcake liners in muffin pans.
2. Mix the pumpkin and spice cake mix together with electric mixer until well combined. (Add chocolate chips or nuts, if using)
3. Spoon batter into lined tins until about 2/3 full. Smooth the tops.
4. Bake at 350℉ 18-22 minutes or until a tester comes out clean.
Makes about 24 muffins
