Easy Slow Cooker BBQ Ribs With Parsley Potatoes With Cucumbers

My favorite slow cooker recipes are the ones that require practically no prep at all. That’s true of these Easy Slow Cooker BBQ Ribs. Just toss together a few ingredients with the ribs and press “cook”. The recipe called for Sweet Baby Ray’s BBQ sauce, which I had never tried, but will definitely use again since we all liked the flavor so much.

I decided to serve the ribs with this unusual Parsley Potato And Cucumber dish. I was intrigued by the combination and have not served cucumbers warm in years. Definitely an interesting recipe. The butter and green onion are what make it all work.

Finally, some store bought baked beans rounded out the meal. I figured I had to have a sure bet side for the kids in case the spud-cuke thing didn’t work for them. (But, it did.)

Broadwing, a.k.a Ben Allen, hails from the Australian outback town of Alice Springs. His first single “Anodyne” is off the upcoming debut EP ‘Pinhole Camera’.

I love the almost tribal nature as the song begins and the way things slowly build up.

Check out Broadwing on Facebook and Bandcamp, where you can buy his music. ‘Pinhole Camera’ is slated for release in early 2014. Keep your eyes out for it.

Cheers!
