My favorite slow cooker recipes are the ones that require practically no prep at all. That’s true of these Easy Slow Cooker BBQ Ribs. Just toss together a few ingredients with the ribs and press “cook”. The recipe called for Sweet Baby Ray’s BBQ sauce, which I had never tried, but will definitely use again since we all liked the flavor so much.
I decided to serve the ribs with this unusual Parsley Potato And Cucumber dish. I was intrigued by the combination and have not served cucumbers warm in years. Definitely an interesting recipe. The butter and green onion are what make it all work.
Finally, some store bought baked beans rounded out the meal. I figured I had to have a sure bet side for the kids in case the spud-cuke thing didn’t work for them. (But, it did.)
Ingredients:
4 pounds ribs
2 teaspoons Worcestershire sauce
1 teaspoon vinegar
Salt and pepper to taste
1 (18 oz) bottle of Sweet Baby Ray’s Barbecue Sauce
2 tablespoons brown sugar
1 teaspoons oregano
Directions:
1. In a bowl, mix together all the ingredients except for the ribs.
2. Place ribs in slow cooker. Pour sauce over ribs, and turn to coat.
3. Cover and cook on low 6 to 8 hours, or until ribs are tender. (I drizzled the pork with some additional BBQ sauce)

Parsley Potatoes With Cucumbers
Ingredients:
8 small new potatoes, about 1 pound, halved
1 cucumber
2 tablespoons butter
2 tablespoons finely chopped green onion
4 tablespoons finely chopped parsley
Freshly ground pepper and salt to taste.
Directions:
1. Place potatoes in a saucepan with water to cover. Bring to a boil then simmer 10 minutes.
2. Meanwhile, peel cucumber and cut them into 1 1/2-inch lengths. Cut each length in half.
3. After the potatoes have cooked for 10 minutes, add the cucumbers. Cook for 4 minutes longer. Drain the potatoes and cucumbers.
4. Return the potatoes and cucumbers to the saucepan and add the butter and green onion. Stir for 1 minutes over low heat. Add the parsley, salt and pepper. Toss well and serve hot.
Serves 4
