My favorite versions of Banana Muffins usually include chocolate chips like this recipe that also included walnuts and this one with pecans.
Sometimes you don’t feel like a nut.
Here’s a bare bones, couldn’t be easier recipe for Banana Chocolate Chip Muffins. Moist and packed with chips.
Ingredients:
1-1/2 cups flour
2/3 cup sugar
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 egg
1-1/3 cups mashed ripe bananas (about 3 medium)
1/3 cup butter, melted
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
Directions:
1. Preheat oven to 375°F.
2. In a large bowl, whisk flour, sugar, baking soda, cinnamon and salt.
3. In another bowl, whisk egg, bananas, melted butter and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips.
4. Fill greased or paper-lined muffin cups three-fourths full. Bake 17-20 minutes or until a tester inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
Yield: 1 dozen muffins
