Totally ridiculous!

You know what else is ridiculous? I’m jealous of that shrimp.

I’m one week into an ankle injury that has kept me from running. I’m a supremely wound up person and running every day is my ticket to a clear mind. It helps keep me calm and always makes me feel fantastic.

This is NOT a good time of year for me not to run, what with the huge to do lists and packed calendar stressing me out. I guess you could say that right now is the opposite of fantastic for me.

Enough whining. Sorry.

I’ll make it up to you by telling you what is fantastic.

Buttery Italian Lemon Shrimp, that’s what.

Perfect for a busy night (or when you need to stay off your feet), this simple dish is ready in less than 30 minutes. Serve it over pasta or rice for a super easy meal.

Buttery Italian Lemon Shrimp
Buttery Italian Lemon Shrimp

Ingredients:

4 oz butter
1 lemon
1 lb shrimp, peeled
1 packet of Italian Dressing and Seasoning Mix

Directions:

1. Prehead oven to 350℉.

2. Melt butter in oven in a cookie sheet or baking dish.

3. Lay lemon slices on melted butter. Top with shrimp and sprinkle over the dry Italian dressing mix. (I mixed the Italian dressing into the butter before topping with the shrimp. I tossed the shrimp with the flavored butter just before serving.)

4. Bake for 15 minutes, until shrimp is cooked through.
