These mini Pepperoni Pizza Puffs are packed with flavor and they couldn’t be easier to whip up. The puffs are perfect for a party, in lunch boxes or anytime you want a fun snack. Bonus: You can freeze a bunch ahead of time. Just pop them in the oven when you need a starter at a moment’s notice.
Ingredients:
1 1/2 cup flour
1 1/2 tsp baking powder
1 tsp Italian seasoning
1 1/2 cups milk
2 eggs, lightly beaten
2 cups shredded mozzarella cheese (or Italian cheese blend)
8 ounces pepperoni, cut into small pieces
1 cup marinara sauce
Directions:
1. Preheat oven to 375°F.
2. Grease two (24-cup) mini-muffin pans.
3. In a large bowl, whisk together the flour, baking powder and Italian seasoning; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes.
4. Stir the batter and divide among the mini-muffin cups.
5. Bake until puffed and golden, 20-25 minutes. Serve with warm marinara sauce for dipping.
Note: The puffs can be frozen. Freeze the baked puffs in a single layer on a baking sheet, then transfer to freezer bag. To reheat, bake at 350°F for 8-10 minutes.
