Derby Pie is a dessert commonly served at Kentucky Derby celebrations. Well, I just made this terrific bar variation and there is no way I wanted to keep the recipe from you until next May. It is that good.
Sweeter than Southern iced tea, the gooey, shortbread bottomed bars are chock full of pecans and chocolate chips. Serve with a shot of milk (or bourbon!).
Ingredients:
2 cups flour
1/2 cup granulated sugar
1/4 teaspoon salt
3/4 cup butter, cut into tablespoons
1 cup firmly packed brown sugar
1 cup dark corn syrup
1/2 cup butter, melted
4 large eggs
2 tablespoons bourbon
2 cups chopped pecans
1 cup semisweet chocolate morsels
Directions:
1. Preheat oven to 350°F.
2. Line a 13×9-inch baking pan with foil; spray with nonstick cooking spray.
3. In a large bowl, combine flour, granulated sugar, and salt. Using a pastry blender, cut in butter until mixture is crumbly. (I did this in the food processor). Press mixture firmly into bottom of prepared pan.
4. Bake for 15 to 18 minutes or until lightly browned.
5. In another large bowl, whisk together brown sugar and next 4 ingredients until combined. Stir in pecans and chocolate. Pour mixture over prepared crust, and bake for 30 to 40 minutes or until center is set.
6. Let cool completely before cutting. Store in airtight container up to 1 week.
Makes 24 bars
