My kids and I love the Doritos Locos Tacos at Taco Bell. The tacos have a shell made from Nacho Cheese Doritos chips which makes them sooooo good.
I came across this Quesadilla recipe that has Doritos stuffed inside, which I knew would give it a similar flavor to the Locos Tacos.
I was right. These Chicken Doritos Quesadillas are spicy and cheesy and crunchy and bursting with nacho flavor. Crazy good.
There are no ingredient quantities given, that way you can adjust the quesadilla to your liking.
Cooked chicken, cubed or shredded
Mexican or taco style cheese, shredded
Sliced pickled jalapeños
1. Preheat a nonstick skillet and coat with cooking spray or a little bit of oil. Warm chicken in skillet and sprinkle with desired amount of taco seasoning. Cook until chicken is coated with the seasoning and heated through. Remove from heat.
2. Preheat grill pan or griddle and lightly grease with oil. Sprinkle a flour tortilla with a generous amount of cheese and layer with Doritos, chicken and jalapeños. Top with a second tortilla and place on the heated grill. Cook until cheese is melted, about two minutes on each side.
3. Slice quesadillas into wedges and serve with cut limes and hot sauce.

I try to keep things light around here, but I must acknowledge the devastating events in Boston yesterday.
I lived in Boston for 8 years, from 1985 to 1993. I ran the Boston Marathon.
I love Boston, visit regularly and have many, many friends there still. I am so lucky that no one I know was injured or worse, but my friends who were on scene at the time of the bombings will be scarred forever.
I pray for every single person affected by this tragedy. My heart aches for the lives forever changed and the long road of healing, both physically and spiritually, that must be faced.
