One of my favorite television shows of all time is I Dream Of Jeannie. This is one of my favorite coconut related scenes.
And this recipe is one of my favorite coconut related muffins. The coconut makes them so moist and is a natural match for the chocolate chips.
Coconut Chocolate Chip Muffins
Ingredients:
2 cups flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup buttermilk
1 tsp vanilla
1 1/3 cups coconut
1 cup semi-sweet chocolate chips
1 cup chopped walnuts
Directions:
1. Preheat oven to 375℉.
2. Grease 16 muffin cups.
3. Cream together butter and sugar until smooth. Mix in eggs and then buttermilk, vanilla, coconut, chocolate chips and walnuts.
4. In a separate bowl combine flour, baking powder, salt and baking soda.
5. Pour flour mixture over the butter mixture. Stir just until moistened.
6. Spoon into muffin cups.
7. Bake for 20 minutes until golden brown. Cool on rack.
Makes 16 muffins
