Peanut Butter-Chocolate Ice Cream Torte. Knock Knock. Who’s There? Jesus H. Foxx.


Apparently, Jesus doesn’t like Knock Knock Jokes.

He does Save.

And he’s your go to guy in a storm.

Jesus digs music. He died for your spins.

Okay, we’ve knocked that junk out of the park.

How about some dessert?

And not just any dessert. Think towering ice cream layers in an Oreo crust, bathed in chocolate ganache and covered in chopped peanut butter cups.

I really thought that I did not like Peanut Butter based desserts.

I do.

You will love this torte, too.

Peanut Butter-Chocolate Ice Cream Torte

Ingredients for crust:

24 Oreo cookies
1/3 cup butter, melted

Ingredients for filling:

1 quart chocolate ice cream, softened
1-1/2 cups creamy peanut butter (I omitted this, but only because I forgot. The torte was just as wonderful without.)
1 quart peanut butter ice cream with peanut butter cup pieces, softened (I used a combination of the pb ice cream and dulche de leche ice cream)

Ingredients for topping:

2 cups (12 ounces) semisweet chocolate chips
1 cup heavy whipping cream
1-1/2 cups coarsely chopped miniature peanut butter cups

Directions:

1. Place cookies in a food processor. Cover and pulse until fine crumbs form. Transfer to a large bowl and stir in butter. Press onto the bottom and 1-inch up the sides of a greased 10-inch springform pan; cover and freeze for at least 15 minutes.

2. Spread chocolate ice cream into crust; cover and freeze until firm. Spread peanut butter over chocolate layer and top with peanut butter ice cream. Cover and freeze until firm.

3. Place chocolate chips in a large bowl. In a small saucepan, bring cream just to a boil (I heated cream in a measuring cup in the microwave for about 1 1/2 minutes). Pour over chocolate; whisk until smooth. Cool to room temperature, stirring occasionally. Spread over top of dessert. Immediately sprinkle with peanut butter cups. Cover and freeze for 1 hour before serving.

I first confessed my love of the band here. ‘Matter’ was (is!!) an incredible collection of music, so I couldn’t wait for the new album’s release.

I got my copy of ‘Endless Knocking’ about a week ago. I’m still thrilling to each listen.

Holy Jesus H. Foxx! There is so much going on in these songs. It is like strapping oneself into a psychotic musical trip where there is disconnect and order at the same time. The thrill of the unexpected is fantastic.
