Irish Coffee Bars


The ingredient list for these amazing Coffee Blondies calls for freshly ground coffee.

Did you ever watch the television show Frasier?

(I know….flight of ideas. Stay with me.)

Well, I loved that show. Still enjoy watching it now and again if I happen across an episode while changing channels.

Aside from the entertainment value, Frasier did have one very lasting effect on me.

I never, I repeat NEVER, use the insink garbage disposal without thinking about this scene.

The coffee connection is quite evident if you watch the video. It is on the long side, but you can skip to 4:32 minutes in and you will see what I mean.

Moving on to these Irish Coffee Bars.

I have never made blondies that had ground coffee in them. Some recipes I have tried called for dissolving the coffee, but not this one. You get the full coffee bean flavor in the base. Really good.

As though that is not enough, the bars are covered in sliced almonds and drizzled with a whiskey glaze. Honestly, I could have eaten that glaze by the spoonful. Sinfully good.

Chewy Irish Coffee Blondies

Ingredients for the blondies:

1 cup unsalted butter, melted
2 cups flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon salt
2 cups packed light brown sugar
3 tablespoons freshly ground coffee
2 large eggs
1 teaspoon vanilla extract
1 cup sliced almonds, skin on

Ingredients for the glaze:

1 tablespoon melted butter, warm
2 tablespoons Irish whiskey
¾ cup confectioners’ sugar

Directions:

1. Preheat oven to 350℉.

2. Butter a 9 x 13 inch baking pan, and line with parchment. Butter parchment.

3. Whisk together flour, baking powder, and baking soda.

4. Melt butter and pour into a mixing bowl with brown sugar, ground coffee, and 1 teaspoon salt. Stir to combine. Stir in eggs and vanilla extract.

5. Stir in flour mixture until just combined.

6. Pour batter into pan and sprinkle with almonds.

7. Bake 30 minutes. (a little less if you prefer a chewier blondie). Let cool completely before adding glaze.

8. Make the glaze by whisking together 1 tablespoon of melted butter and whiskey.

9. Gradually whisk in confectioners’ sugar until glaze is thick but pourable (you may not need all the sugar).

10. Using a spoon or a pastry bag fitted with a plain round tip, drizzle glaze over blondies in a rough crosshatch pattern. Let glaze dry 1 hour.

Cut blondies into 2 inch squares.
