Boo! Mummy Dogs And Potato Salad.

I loved these Yummy Mummies. They are super easy to make. I was going to make a scary side to go with them, but I had tons of potatoes from a friend’s garden that I wanted to use up. So an equally yummy Southern Potato Salad joined my little dudes.

Mummy Dogs

Ingredients:

2 (13.8 oz) cans of refrigerated pizza dough (such as Pillbury’s)
2 (16 oz) packages beef hot dogs
Mustard for garnish

Directions:

1. Preheat oven to 400℉.

2. Unroll dough on a lightly floured surface. Using a pizza cutter, cut dough into thin strips. Wrap dough around hot dogs and place on a parchment lined baking sheet.

3. Bake for 10 minutes or until crust is golden brown. Dot with mustard to create eyes.

Southern Potato Salad

Ingredients:

3 pounds waxy red potatoes, such as red potatoes or Yukon Gold
1 Tbs olive oil
2 Tbs white wine vinegar
1 cup thinly sliced celery
1/4 red onion, thinly sliced and soaked in 2 Tbs white wine vinegar for 30 minutes or overnight (this was my touch that I thought made the potato salad really good and different. You could also use 1/2 cup of sweet onion, chopped, instead as the original recipe called for)
1 cup mayonnaise
Chopped parsley to garnish
Salt and fresh ground black pepper, to taste

Directions:

1. Place rinsed, scrubbed and quartered potatoes in a large stockpot and fill the pot with water until the water covers the potatoes by one inch. Add 1 tsp salt. Place the pot over high heat, cover and bring to a boil. Once water comes to a boil, reduce heat to medium, remove cover from pot and cook potatoes for about 15 minutes or until fork-tender.

2. Drain potatoes and when cool enough to handle, peel the potatoes (if you like) then dice and add to a large mixing bowl.

3. Add remaining ingredients and gently fold everything together. Add salt and pepper to taste. Serve chilled or at room temperature, garnished with parsley.
