Tortellini With Roast Beef And Broccoli In Red Wine Vinaigrette

Who knew this recipe would be so delicious?

I needed something fast for dinner and this is “Cookbook” month, where I try to make at least one recipe from every cookbook I own. Insane and impossible, but then that is me for you.

Anyhow, I made this and it was AMAZING. My family agreed. Something about this combination of flavors and textures really clicks.

Definitely give it a try.

Tortellini With Roast Beef And Broccoli In Red Wine Vinaigrette

Ingredients:

9 oz cheese tortellini
2 cups broccoli florets, cut into small pieces
12 oz sliced, cooked roast beef from deli, cut into strips
1/2 small red onion, thinly sliced
1 red bell pepper, thinly sliced
1/4 cup small black olives or chopped green olives
2 Tbs coarsely chopped parsley
1/3 cup olive oil
3 Tbs red wine vinegar
1/2 tsp salt and pepper
1 clove garlic, crushed

Directions:

1. Cook tortellini according to package directions.

2. Steam broccoli until crisp, about 3 minutes.

3. Combine tortellini, broccoli, roast beef, onion, bell pepper, olives and parsley in a large bowl. In separate bowl, whisk oil, vinegar, salt, pepper and garlic. Pour over salad and let stand 30 minutes at room temperature before serving.
