Cumin And Cayenne Spice Nuts

This is one of my favorite ways to prepare nuts. Coated so that each nut is sweet and hot, this recipe makes the statement “I bet you can’t eat just one” oh so true.

Cumin And Cayenne Spiced Nuts

Ingredients:

1 egg white
1 lb mixed nuts (I like cashews, pecans, almonds and macadamia nuts)
1/3 cup sugar
2 tsp cumin
2 tsp kosher salt
1 1/2 tsp cayenne pepper

Directions:

1. Preheat oven to 250℉.

2. In a medium bowl, whisk egg white with 1 Tbs water until foamy. Add nuts and toss to coat. Transfer nuts to a strainer and let drain 2 minutes.

3. Wipe out bowl and add sugar, cumin, salt and cayenne. Add nuts and toss to coat thoroughly.

4. On a large baking sheet, spread nuts in a single layer. Bake 40 minutes. Stir and spread nuts out again. Reduce heat to 200℉ and bake 30 minutes longer, until dry.

5. Remove nuts from baking sheet and cool.

Makes about 3 cups
