The theme for this week’s Contrast Podcast is Flying. If you want to know what I
fucking despise think about flying then have a listen here.
Now you certainly aren’t going to get any cashews on a typical airplane any time soon. Peanuts are dinosaurs. And don’t even get me started on requiring credit cards to buy anything in the air. Also, did you know I ALWAYS get the seat where the person in front of me insists on reclining until his seat back is crushing my 20 foot long legs and his head is close enough for me to check for lice? And lucky me gets the broken audio. And the annoying stranger next to me. I definitely feel Elaine’s pain in this clip.
Bake these cashew bars and pack them for your next flight. Your neighbors will be jealous. Just do it now before we have nut free planes. Or before they charge you to bring your own food on board.
Cashew Butter Chocolate Chip Bars:
2 1/4 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 pound butter, melted
1 2/3 cups light brown sugar
1/3 cup sugar
1/2 cup cashew butter
2 eggs plus one extra yolk
3 tsp vanilla extract
1 cup coarsely chopped salted cashews
2 cups chocolate chips
1. Preheat oven to 350℉ and butter a 13×9 inch baking pan.
2. Whisk together flour, baking powder, baking soda and salt.
3. In another bowl mix the butter, sugars, cashew butter, eggs, yolk and vanilla. When smooth add the flour mixture. Stir in cashews and chips.
4. Spread batter into prepared pan. Bake for about 30 minutes, or until top is just set. Cool and cut into squares.
The song I chose for The Contrast Podcast is this one by My Teenage Stride. I recommend blasting it while you wait 5 hours in line to get through security. You can put it on repeat.
My Teenage Stride-To Live And Die In The Airport Lounge
Now for the scariest song about flying ever. I get chills every time I have a listen. Especially when she sings/talks (stalks?) the line “This is your Captain. We are going down. We are all going down together”.
Laurie Anderson-From The Air
I would SO make these if I weren’t the only cashew fan in my household! As it is, if I buy mixed nuts, I get ALL of the cashews! YAY!
I made Ina Garten’s roasted cashews with rosemary for a party, and they were a hit, but my husband complained that I didn’t make anything FOR HIM. hahaha.
I LOVE the tunes. LOVE LOVE.
Cashews are my favorite nut. I love that Ina Garten cashew recipe. One of the few that I have that are served warm.
I have this really good cumin/cayenne/sugar nut recipe that I make a lot and am going to post soon. Lucky you can pick all of the cashews out of the bowl!!
Where are you flying?? And Ned got that job in Boston!! wahoo! (my plans to move there are slowly falling into place now :-) ).
Those bars look real good Tricia.
Boston is such a fantastic place to live. Congrats to Ned! How exciting for you to move there, too. I hope those plans continue along their proper path!!
Oh these look so good! And I happen to have cashew butter in the house right now…
I have long legs too so I very much feel your pain on the issue of reclining seats. Love the My Teenage Stride, thank you so much.
Putting cashew butter and cashews on the list right now! Oh, for the free baking weekends that await me once my career as hockey season chauffeur ends.
