Quesadilla Pie

I’m gearing myself up for an afternoon at the movies with 9 children. I have nothing left to say. Oh, I do….this Quesadilla Pie is really good.

Quesadilla Pie

Ingredients:

10 oz can of red or green enchilada sauce (I always double the whole recipe and make one green pie and one red one)
1/4 cup heavy cream
4 (8 inch) flour tortillas
8 oz grated Monterey Jack cheese
3 chicken breasts, cooked and shredded
1/2 small red onion, finely chopped
1 zucchini, quartered and thinly sliced
1 cup salsa
1 avocado, diced
1 cup cilantro leaves

Directions:

1. Heat oven to 400 F.

2. Combine enchilada sauce and cream. Spoon 1/4 cup of the sauce mixture into the bottom of a 9 inch pie plate. Top with 1 tortilla and a third each of the cheese, chicken, onion and zucchini. Repeat twice to form a total of 3 layers. Top with remaining tortilla, sauce and cheese.

3. Cover loosely with foil and bake for 20 minutes. Uncover and bake 10 minutes longer.

4. Slice into wedges and serve with salsa, avocado and cilantro.

Days like these scream for The Decemberists. By the way, I don’t think I told you all how FANTASTIC the concert was last month. If you have never seen The Decemberists in concert try and get tickets for this tour. Amazing show. LOVE, LOVE, LOVE Colin Meloy. Chris Funk, too. And Jenny and Nate and John. Go buy all of their albums. You won’t be sorry.

    Keep the Mexican recipes coming! I will definitely try this. And, if you have a good enchilada recipe – give it up :) By the way, I have to ask, what movie are you subjecting yourself to with 11 children????

    • We’re going to see Gnomeo and Juliet to belatedly celebrate Pierce’s BD. Then out for pizza. At least I know the pizza will be good!

      I have two really good enchilada recipes. I’ll email them to you right now before I take some aspirin and leave for the movies. Wherefore art thou Sunday?
