Peekaboo! I see an easy dinner.
As much as I love pasta cloaked in cream or tomato based sauces, sometimes a super simple preparation is a welcome change. Easy Pasta With Veggies is exactly that, with a bit of cheese and seasoning tossed in. Make it your own by using your favorite pasta shape and any vegetables you love.
12 ounces shell pasta
2 Tbs olive oil
1 (4 oz) can chopped green chiles
2 teaspoons minced garlic
16 oz frozen mixed vegetables, thawed
1 tablespoon Italian seasoning
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1 cup taco blend shredded cheese
1. In a large pot of boiling water, cook pasta until tender; drain and keep warm.
2. Meanwhile, in a large skillet, heat olive oil until moderately hot; add chiles and garlic and sauté 1 minute. Stir in mixed vegetables, Italian seasoning and black pepper; cook an additional 2 minutes to heat through.
3. In a large bowl, toss vegetable mixture with pasta and cheeses and mix well.
